Easy Roast Chicken & Potatoes

Serves 4–6

Ingredients

  • 1 whole chicken (approx. 1.6–2kg)

  • 1–1.2kg potatoes, peeled or scrubbed and halved

  • 2–3 tablespoons olive oil

  • 3–4 cloves garlic, lightly crushed

  • A few sprigs of rosemary or thyme (optional)

  • Sea salt and cracked black pepper.

Method

  1. Preheat oven to 200°C.

  2. Place the potatoes into an OvenChef dish from Duralex, drizzle with olive oil, season well, and toss to coat.

  3. Pat the chicken dry and place it on top of the potatoes. Drizzle with olive oil, season generously, and scatter garlic and herbs around the dish.

  4. Roast for 1 hour 20 minutes, or until the chicken is golden and cooked through, turning the potatoes once during cooking.

  5. Rest for 10 minutes before carving. Serve onto your favourite Duralex Dinnerware.
